01 Oct Green Cubes
Farm fresh greens are full of beneficial nutrients and minerals. They can easily be turned into frozen green cubes that preserve their nutritional benefits. Once you have made the green cubes, they can be used in sauces, soups or smoothies.

Green Cubes
Ingredients:
Greens- kale, spinach, arugula, Swiss chard, dandelion, beet, radish and turnip greens, etc.
- Wash all greens.
- Prepare a large pot of boiling water and an ice bath.
- Place greens in boiling water and blanch for 30 seconds to 1 minute. Remove and immediately place in ice bath.
- Let the greens cool a little bit in the ice bath and then place in a food processor. No need to dry the greens- you want them wet so they blend better. Puree until all greens are finely chopped.

- If the greens do not blend well, add a little bit of water and scrape down the sides.
- Scoop the pureed greens into ice cube trays.

- Once frozen, pop the cubes out of the ice cube trays and place in a ziplock bag to store in the freezer.
- Enjoy in smoothies for an easy nutritional boost or add to meals like spaghetti sauce or chili.

Optional- 1-2 Tbsp nut butter
- Add all ingredients to a high speed blender. Blend well and serve immediately.
